The Open Mussel Toast

This is the kind of lunch that feels more considered than the effort it takes. Grilled bread spread with cream cheese, layered with fresh salad leaves, ripe tomato, and a few sharp cucumber pickles — then generously topped with tinned mussels and finished with a scatter of fresh chives. Every bite has something going on: creamy, fresh, briny, a little acidic. It's an open sandwich that earns its place on the table.

Ingredients

  • 2 thick slices of good bread, grilled or toasted
  • 1 tin of mussels in escabeche or olive oil (approx. 110g)
  • 3–4 tbsp cream cheese
  • A handful of fresh mixed salad leaves
  • 1 ripe tomato, thinly sliced
  • A few cucumber pickles or cornichons, sliced
  • 2 tbsp fresh chives, finely chopped
  • Black pepper

Instructions

  1. Grill or toast the bread until golden with a little char at the edges.
  2. Spread cream cheese generously over each warm slice.
  3. Layer salad leaves over the cream cheese, then lay the tomato slices on top.
  4. Tuck in a few cucumber pickle slices.
  5. Open the tin and spoon the mussels over each toast. Drizzle a little of the oil or sauce from the tin over everything.
  6. Scatter fresh chives generously on top, add a grind of black pepper, and serve immediately.

Serving suggestion

Eat it while the toast is still warm. That's when the cream cheese softens just slightly and everything comes together. A small sharp knife on the side helps with the first cut, but after that it's all hands and good appetite. A cold glass of dry white wine or a light lager alongside turns this into a proper lunch.
