Ten to fourteen small sardines, toasted and hand-packed with olive oil and a whole red chilli. Creamy fish and mellow oil meet a bright, controlled flicker of heat.
Prepared one by one in Galicia, the sardines retain their delicate shape and the clean intensity for which Real Conservera Española is known.
Serve on buttered toast with grated tomato and mild onion, or eat simply with a cold glass of white wine.
