Yes. Bonito del Norte is the Spanish name used for albacore, or white tuna. It is prized for its pale colour, delicate flavour and tender flakes. Other tins may use species such as yellowfin, which has its own texture and character; check each product page for the exact fish.

Fillets are firm, clean and easy to flake into salads or warm dishes. Belly—often called ventresca—is a more marbled, succulent cut with an especially delicate texture. It is best served simply so the quality of the fish remains the focus.

Serve it at room temperature with good bread, tomatoes, white beans, olives or lemon. It also works beautifully in a composed salad or gently folded through pasta. Avoid breaking fine fillets more than necessary, and use the olive oil or sauce as part of the dressing.

Follow the product label. Transfer leftovers and their liquid to a covered container, refrigerate promptly, and enjoy within two days. Unopened tins should be stored somewhere cool and dry and used by the date on the package.
