They are distinct fish. True mackerel belongs to the Scomber family and is known for rich, soft and oily flesh. Horse mackerel belongs to the Trachurus family and is generally smaller, with a firmer texture and a clean, savoury flavour. Both take beautifully to preserving.

Mackerel is ready to eat from the tin. Try it with boiled potatoes, mustard and herbs; on toast with pickled onion; or folded gently into pasta, rice or a crisp salad. Let the preserving oil or sauce become part of the dish.
