Bonito del Norte in Catalan Sauce

This Bonito del Norte, the prized white tuna of the Cantabrian Sea, is hand-packed by Conservas Zallo in Bermeo using the same traditional methods the family has followed for generations.

Here the tender loins are dressed in a vibrant Catalan-style sauce of wine vinegar, olive oil, spices and a touch of garlic, adding a tangy, savoury contrast to the fish's delicate flavour. Serve on toast, with rice, or alongside roasted vegetables.
