This Bonito del Norte, white tuna from the Cantabrian Sea, is hand-packed by Conservas Zallo in Bermeo, a small fishing port on Spain's northern coast that has worked these waters since 1926.
Here the tender loins are marinated in a classic Spanish escabeche of wine vinegar and olive oil, a traditional preservation technique that gives the fish a bright, tangy edge. Lovely on toast, in salads, or with boiled potatoes.
