Bocarte, the small, silvery anchovy of the Cantabrian Sea, has been hand-packed by Conservas Zallo in Bermeo for close to a century.
These whole fillets are cured in virgin olive oil with a touch of cayenne pepper, giving a gentle warmth alongside their rich, savoury flavour. Perfect on toast, with pintxos, or straight from the tin.
