Lemon Oyster Cream on Mini Toasts

There is something about a good tinned oyster spread that makes even a quiet evening feel worth celebrating. Maison Marthe's Huître au Citron is already rich, creamy, and deeply savory straight from the tin — all it needs is a fresh squeeze of lemon and a scatter of chives to bring it alive. Spoon it onto crisp mini toasts and serve. That's genuinely all there is to it.

Ingredients

  • 1 tin of Maison Marthe spreadable seafood cream (Huître au Citron used here — mackerel, sardine, or other varieties work just as well)
  • Juice of ½ lemon
  • 20–24 mini cocktail toasts
  • 2 tbsp fresh chives, finely chopped

Instructions

  1. Open the tin. Add a small squeeze of fresh lemon juice and stir gently to combine.
  2. Spoon the oyster cream generously onto each mini toast.
  3. Scatter fresh chives over the top and serve immediately.

Serving suggestion

These are best served the moment they're assembled — the toasts stay crisp and the cream stays cool. A glass of cold champagne, Chablis, or dry sparkling wine is the natural companion.
